I have long referred to compliance as the unglamorous part of winemaking. I say this because all the details involved in maintaing a winery compliance system are necessary ones but for the most part very unpopular to those responsible for maintaining them. The reasons for this can often be related to the simple fact that their compliance “systems” are ineffective or basically non-existent.
